Ingredients: 
  • 30 ml olive oil.
  • 900g of fresh tomatoes.
  • 2 garlic cloves.
  • 1 small potato, peeled and sliced.
  • 300 ml water.
  • 1 tsp sugar.
Method: 
  1. Pre heat your oven to gas mark 5 or 190°C or 375°F.
  2. Wash and cut the tomatoes in half.
  3. Lightly oil a roasting tin and arrange the tomatoes with the cut side facing upwards.
  4. Add the garlic cloves and drizzle the remaining oil over the top.
  5. Put in the oven for 30 minutes.
  6. In a saucepan, boil the potato in the water until the potato is tender.  Do not discard the water, you will need this later!
  7. When ready, remove the garlic and tomatos from the oven, then skin them both.
  8. Put the skinned tomatoes and garlic in a food processor, add the potato and water.  Blen until smooth.
  9. Tip the blended mixture into a saucepan over a gentle heat.
  10. If the mixture is too thick add a little bit of vegetable stock or water.
  11. As the mixture heats up, stir in the sugar.
  12. Serve while when piping hot with some fresh cut bread.
