Bruschetta with Mozzarella and Tomatoes

Ingredients: 
  • 1 ciabatta loaf.
  • 5 tbsp olive oil.
  • 1 peeled clove garlic.
  • 10 basil leaves.
  • 5 ripe vine tomatoes with seeds removed.
  • 150 g pack mozzarella cheese.
  • salt and freshly ground black pepper.
     
Method: 
  1. Preheat your oven to gas mark 3 or 170°C/325°F.
  2. Slice the ciabatta loaf into about 12 slices.  Throw the end pieces away.
  3. Lay the sliced ciabatta on a large baking sheet and drizzle half of the olive oil all over them, turn the slices oved and drizzle this side with the remaining oil.
  4. Put the baking sheet with the slices on in the oven for around 10 minutes until the slices of ciabatta become a pale golden colour.
  5. Remove from the oven, and allow them to slightly cool.
  6. Get the peeled garlic clove and rub it on one side of each of the ciabatta slices.  Any remaining garlic can be thrown away.
  7. Leave the slices to cool completely.
  8. You can store these slices in an airtight container for upto 3 days.  However, I always think they are best served fresh!

The Topping

  1. Chop the tomatos and put the in a bowl.
  2. Finely chop the basic and put it in the bowl with the tomatos, season with a little salt an pepper.
  3. Tear the mozzarella into pieces.
  4. Spread the tomatoes over the ciabatta slices and then finish them off with the mozzarella.
