Ingredients: 
  • 2 pounds Brisket, sliced.
  • 1/2 cup soy sauce
  • 1 teaspoon ground black pepper
  • 2 teaspoon brown sugar
  • 2 teaspoon hot pepper sauce
Method: 
  1. In a large bowl, add the soy sauce, ground black pepper and the brown sugar.  Mix the ingredients well.
  2. Put the steak in a plastic sealable container and pour the soy sauce mixture ove the top.  Place the sealed container the refrigerator and leave for 24 hours.
  3. In your oven, put the top rack to the highest position and add some foil to the bottom to catch any drippings.
  4. Heat the oven to gas mark 1 or 140°C / 275°F.
  5. Insert a wooden cocktail stick into each end of the slice of meat.  Suspend the meat on the top rack of the oven.
  6. Back in the oven with the door slightly open.
  7. You should back for 5 to 8 hours.
  8. To test if the jerky is ready, it should bend but not snap.
