Ingredients:
- 8 oz/250g plain flour.
- 4oz/ 100g butter, cubed or an equal mix of butter and lard.
- 1 Pinch of salt.
- 2-3 tbsp cold water.
- 1 jar of mincemeat.
- 2 tbsp icing sugar.
Method:
- preheat the oven to 425F/220C or gas mark 7.
- Place the flour, butter and salt into a large clean bowl.
- Working as quickly as possible, rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.
- Wrap the dough in some clingfilm and put in the fridge to chill for 20 minutes.
- Dust your work surface with flour and roll out around two-thirds of the pastry until it is around 3 mm thick.
- Cut out circles using 3" circular pastry cutters.
- Line a bun tray with the cut out circles.
- Fill the pastry cups with 1 heaped tsp of mincemeat.
- Take the remaining pastry and roll out to the same thickness (3mm) as before.
- Using a smaller circular pastry cutter, cut out enough circles to cover the mince pies.
- Dampen the edges of the pastry cups with a little bit of colde water. Using a pastry brush will help prevent your pastry becoming soggy.
- Put the lids on the cups.
- Make a small hole in the top of each pie to let the steam out.
- Bake in the oven for 15 minutes or until the pies are golden brown.
- Remove from the oven and sprinkle with icing sugar.
