Pumpkin pie is a classic recipe for autumn. Why not have a go at making one yourself with this easy to follow recipe.

Ingredients:
- 175g of granulated sugar.
- 1/2 tsp of salt.
- 1 tsp of ground cinnamon.
- 2 eggs.
- 1/4 tsp of ground cloves.
- 1/2 tsp of ground ginger.
- 300g of pumpkin purée (tinned or fresh).
- 350g of evaporated milk.
- 1 deep 23cm/9in tart tin lined with readymade shortcrust pastry.
Method:
- Preheat your oven to gas mark 7 or 220°C/425°F.
- Line your tin with the readymade shortcrust pastry.
- In a bowl, combine the sugar, cinnamon, ginger, salt and the cloves.
- In a seperate bowl, beat the eggs, then stir in the pumpkin puree and the spice mixture.
- When they have combined, gradually stir in the evaporated milk.
- Pour the mixture into the prepared pastry case.
- Bake in the oven for aroun 15 minutes, then reduce the temperature to gas mark 4 or 180°C/350°F.
- Bake for a further 45 minutes until when a knife is inserted into the centre of the pie, it comes out clean.
- Remove from the oven and leave it to cool on a wire rack for at least 2 hours.
- Serve immediately or put in the fridge to chill.
