Ingredients: 
  • 4 boneless breasts.
  • 1 cup chicken stock.
  • 2 tbsp olive oil.
  • 1 tsp minced garlic.
  • 1 tsp dried thyme.
  • 2 tbsp white wine vinegar.
  • Salt and pepper for seasoning.
  • Plain Flour.
Method: 
  1. Season the chicken breasts with the salt and pepper.
  2. Put a good serving of plain flour in a tray, coat the chicken breasts by rubbing them into the flour.
  3. Heat the oil in a shallow pan on a moderate heat until the oil is hot.
  4. Add the chicken to the pan, brown well on oneside, the turn the chicken breasts over and brown the otherside, this should be around 5 minutes for each side.
  5. When done, remove the chicken from the pan and set aside for later.
  6. To the pan that now contains the liquids from the chickenn, add the garlic, thyme and white wine vinegar, then add the chicken stock.
  7. Turn the heat up on the pan to high and bring to the boil.  Keep boiling until the liquid reduces and become thicker.
  8. Pour over the chicken and serve on a bed of white boiled rice.
