This is a great recipe especially during autumn and winter. It's easy and quick to make.
Pumpkin bread is best served with cream cheese spread on the top.

Ingredients:
- 5 cups of plain flour.
- 16oz of Pumpkin Puree.
- 3/4 of a cup of brown sugar.
- 2 cups of white sugar.
- 4 eggs.
- 1 cup of vegetable oil.
- 2 tsp baking powder (soda).
- 1 1/2 tsp of ground cinnamon.
- 1/4 tsp ground nutmeg.
Method:
- Pre heat your oven to gas mark 4 or 180°C/350°F.
- Mix together the flour, baking powder, cinnamon, nutmeg, salt and sugar in a large bowl. Mix it with a wooden spoon if possible.
- In a small bowl, mix together the pumpkin puree and the oil.
- Beat the eggs in a seperate bowl and drizzle into the dry mixture whilst stirring. If possible use an electric mixer.
- Pour the pumpkin mixture into the large bowl containg the batter.
- Mix all the ingredients togther thoroughly until the mixture is smooth.
- Grease two loaf tins.
- Divide the batter between the two loaf tins.
- Bake for 1 hour, do not open the oven during this time.
- To check if the bread is cooked. Insert and remove a skewer. If the skewer comes out clean then the bread is done.
- When the bread is cooked, remove from the oven and place the pans on a cooling tray to cool. Allow the pans to cool completely before turning the bread out.
