Ingredients:
- 6 tblsp of vegetable oil.
- 3 tblsp of white wine vinegar.
- 1 large Garlic clove.
- 1/2 tsp of mustard.
- 1/2 tsp salt.
- 1/2 tsp dried basil.
- 1/4 tsp of pepper.
- 1/2 cup Slivered or crushed almonds.
Method:
- Crush the clove of garlix and set aside for use later.
- Cook cauliflower as normal, don't allow the cauliflower to become too soft. Wash and drain and allow to cool.
- Wash and trip the spinache.
- Stack the spinach leaves in a crosswide fashion into strips.
- Place the cauliflouwer in a salad bowl put the spinach on top, cover and put in the fridge.
- When you are ready to serve, make the dressing as follows:-
- Into a clean jar put the oil, vinegar, garlic, salt, mustard, basil and finally the pepper. Put the lid on the jar and shake well to blend all the ingredients.
- Pour the dressing onto the cauliflower and spinace, add the nuts and then toss gently ensuring all the incredients get covered with the dressing.
- Serve straight away.
